I Just Made Coconut Cream Cupcakes

From this website: Coconut Cream Cupcakes - and they turned out….a’ight.  Not great, just a’ight.  Maybe b/c I used margarine instead of butter?  Maybe b/c I don’t know how to cream butter, sugar, and eggs?  I wish I could make awesome cupcakes.  I think that would be the coolest thing, to make amazing baked goods.  Like those shows you see on TLC and whatnot - Ace of Cakes, Cake Boss, etc.

For the icing I went w/this recipe for Coconut Rum Cupcakes (b/c I didn’t have 2 blocks of cream cheesewhohasthat? or coconut cream puddingwhohasthat?) - Coconut Rum Cupcakes - and it turned out pretty delicious.  Except it looks nothing like what you see in the pic, all cute and swirled, able to hold that design for more than one second.  Nope, my icing is pretty runny, even after using about a POUND of powdered sugar!  I decided to halve the recipe b/c the chick who runs this website likes to eat, apparently.  Or maybe cook for a soup kitchen or something.  It makes me want to just go out and buy icing b/c I’ve tried making icing twice now using her recipes, and it’s mainly just butter and a fuck ton of powdered sugar.  Diabetes, much?  Both times I decided to use less powdered sugar (well, actually, the first time I ran out I used so much), and both times the icing has been runny.  Makes you wonder what’s in the products you buy at the store.

Anyway, I think I may be doing more of this - cooking and then blogging about it.  I guess kind of like that movie Julie & Julia, except not every day, I don’t have that kind of motivation, are you kidding me?  I can’t even stick to a fairly consistent work out schedule!  I actually like How Sweet It Is, if only because she uses strange combinations of food, which I like the sound of.  (However, when it comes to actually making the food, could be a completely different story).

-2 waffles w/butter and syrup
-2 pickles
-steak w/green peppers and onions
-corn/green bean mixture
-cookies and cream ice cream float (Vanilla Coke)
-more cookies and cream ice cream
-1 extra strength Tylenol
-1 Advil
-3 Tums
-2 tbsp Pepto Bismol

Ok, now that I look at it, the need for Tums and Pepto Bismol makes sense.  Shit.

Happy Cinco de Mayo….or In My Case, Cinco de Pounds-o

Yes, folks, I have been eating for two these days…………………….no, I’m not pregnant, I’m just a fatass.  I won’t go through the effort to make another picture blog which highlights the incredible amounts of money I’ve been spending on food, but suffice it to say that you can just multiply last week’s fast food portion by three and you’ll get what I’ve been eating the past 2 days.

Le sigh.  To spell this out for you, I’ll say that the reason for eating this horribly shitty trash food is because 1) I was out of town and staying with friends, 2) I feel bad eating their food, especially when they’re struggling to pay rent, 3) I spent about 3/4 of the time driving, and 4) It’s “cheap” (until it adds up and you start feeling magnificent about yourself and your ability to rack up $70 in fast food…yeah. That’ll make ya feel good).

I definitely feel like I need a “cleanse” shall we say…so tomorrow I’m drinking bucketloads of water and eating far less than what I have the past two days.  I also have been majorly slacking w/running.  I am going to the rec tomorrow and I betcha I can’t even run 2 miles w/o dry heaving (I don’t think last night’s chili mac + chili cheese fries have made their way through yet…)  This is the life of a winner!  I feel so goddamn accomplished!  (But you know, on the other hand, I DID actually have 2 interviews, plus 2 the week before, and then at least one more next week, so I don’t feel completely sorry for myself, yet.)

In The Past 24 Hours

I have eaten cheese fries…twice.  I had a double fudge chocolate shake, which was probably 1/3 hot fudge.  I drank champagne, 2 amaretto sours, 3 1/2 vodka+Red Bulls.  I had 2 of the most disgusting frozen burritos known to mankind.  I had a whole bag of cinnamon sugar coated almonds.  I had at least 2 cups of coffee with lots of creamer and sugar, and 2 or 3 sodas.  I had the greasiest patty melt at Steak N Shake at about 2am.  My stomach hates me.  Maybe I’m a wee bit impulsive.
